| Chicken Curry: 4 chicken breast, sliced in strips 2 bell peppers each color: red, yellow, and green 1 1/2 cup of thin green beans 1 bag of frozen organic peas 1 can of crushed tomatoes 1/2 can o tomatoes puree 1 medium onion 4-5 cloves of garlic cumin coriander turmeric paprika cinnamon cloves sea salt and pepper to taste | Crunchy Salad: 1 head of red oak lettuce (washed and dry) 1 head of green oak lettuce (washed and dry) 2 long carrots (shaven off in long peels) 5-6 green onions (diced) 1 red bell pepper (long strips, cut in 2) 1 green bell pepper (long strips, cut in 2) 4-5 roma tomatoes (chopped big) 1 handfull of fresh parsley (chopped small) 1 handfull of fresh dill (chopped small) Dressing: 1/4 cup EVOO 1/8 lemon juice (or balsamic vinegar) coarse sea salt fresh ground black or green pepper YUMMY:-) |
Fry the chicken, let it get some nice color on both sides, then add the veggies, let them mingle a bit (5-10 minutes), and add the tomatoes and the spices. Turn to low, let it simmer for a good 5-10 minutes, so all the flavors marry. Enjoy:-)
